delhi eats: pani poori at bikanervala


instead of lunch, satish and i went for snacks and sweets - indian-style. bikanervala, on connaught place, is a bright, festive cafeteria-style mecca to chaat, equally lipsmacking for adults as for children.
we started with do-it-yourself pani poori. satish deftly showed me how it's done: first gently tap the poori with your spoon - or, more authentically, crumble the top with your thumb. drop of spoonful of filling into the hole (potatoes, chickpeas and spices). top it off with either the tamarind-flavored (red) or coriander-flavored (green) masala water. then in one fell swoop, pop it into your mouth.
satish says his wife can eat a dozen pani poori at one sitting, she loves them so much. i'm sure i could, too, but i had other snacks to try.
