la tortilladora
santa - OK, todd - got me one of the things on my wishlist for christmas - a tortilla maker! so i decided to have a taqueria fiesta after yoga class.
it's not as easy at it looks, though. after locating masa harina, i discovered in my three mexican cookbooks that the best way to keep the masa harina from sticking to the tortilladora is to use clingfilm (aka Saran wrap). HUH? surely the aztecs didn't use this technique.
now, the problem is that the CLINGFILM i had was pathetic. it wouldn't rip properly and finally i just succumbed to weirdly shaped tortilla. sigh. but i think the homemade tortillas, if a little misshapen, were delicious!

yumm. Homemade corn tortillas are the shizz. That contraption did seem a bit wack. Could you lightly dust it with corn flour?
hi toodles! the contraption is great. i love it, and i keep it out on my stove 24/7! it's the technique that's sketch. i will try dusting it! will report on the outcome..
